Extracted Development

Extracted Development is a coffee competition for baristas and roasters, designed with both competitors and the audience in mind. This competition seeks to demonstrate and push true behind the bar skill sets, create a culture of skill sharing and networking and celebrate individual competitors' real personalities and talent, while never losing focus on accessibility, community and environmentalism.

The competition will shine a light on individual barista and roaster skills and coffee knowledge, and also on the significance of sharing those qualities with one another as a competitor duo. The Rules and Regulations have been designed with the realities of brewing in a cafe environment in mind; each round has been built to reflect and celebrate the expertise of being a truly great coffee professional.

How It Works

Each team, composed of one roaster competitor and one barista competitor, will compete using a coffee provided and roasted by the roaster competitor. This competition coffee cannot be sourced by the roaster competitor exclusively for competition; it must be part of their pre-existing coffee range. All competition coffees will have a green coffee price cap of £18.00 per kilo (landed price) and must have scored 80 points or above on the 100-point scale used on the Specialty Coffee Association Cupping form. Competitors are welcome to use more than one coffee between the filter and espresso rounds, or alter the roast profiles accordingly, but there is no requirement to do so- competitors may also use the same coffee with the same roast profile for all rounds. Blends and decaf coffees are perfectly acceptable choices for Extracted Development.

Each competing duo will have an 18 minute time slot during which they must present an espresso, a plant-based milk drink and a filter coffee in any order to a panel of three ‘Experience Judges’. It is down to the competitors to determine how long they spend on each brewing session, but they must complete the entire presentation within the 18 minutes allotted, with an opportunity for bonus points if they complete the session in 15 minutes or under as a way to promote speed of service skills.

Competitors

Eight teams will come together, each team will be made up of one roaster competitor and one barista competitor.

The roaster and barista competitors will be randomly selected after submitting their application to Cup North. Competitor teams will be paired based primarily on geographical proximity, to form one team of two individuals.

Competitors are expected to meet virtually and in-person before the competition to prepare for the delivery of their competition coffee and routine together as a team.

Judges

There will be three types of judges throughout the competition: three Experience Judges, two Skills Judges and one Mystery Judge.

The Experience
Judges

Three ‘Experience Judges’ will be present on stage simultaneously to each team’s 18-minute performance slot. These are the judges that the competitors will present their beverages to and direct their customer service demonstration to. The Experience Judges will judge the experience provided by the competitors from the sensory experience to the customer service experience. Individual Experience Judges’ scores will be added together to give a cumulative total.

The Skills
Judges

Two Skills Judges will also be present on stage, verifying the techniques used and consistency between the team members, recording the time competitors take to complete their set and checking the station for cleanliness after the competitors leave to present their beverages – they will judge the hard and soft skills demonstrated by the competitor duo.

The Mystery
Judge

The Mystery Judge will visit the competitors during their time on the competition brew bar. This Mystery Judge will remain anonymous and seek to experience the competitor duo's customer service skills outside of the pressure and nerves of performing on stage. The Mystery Judge will also be tasked with asking the competitors a question or questions related to their Environmental Awareness Checklist that all competitors will be required to complete prior to competition day. The Mystery Judge can award the competitor team up to 20 additional points based on their customer service experience and their ability to respond to a question connected to their sustainable reporting.

Where can I taste the competition coffees?

Each competitor team will be allocated x2 slots each on the bespoke competition brew bar created solely for the competition. The bar will be kitted out with equipment provided from the competition sponsors: audience members are invited to visit the brew bar during the festival to interact with the roaster/barista team and learn more about their coffee and respective skills sets, brands, competition experience, Environmental Awareness Checklist and more.

During their time on the bespoke competition brew bar, competitor teams will have the opportunity to interact with many of the festival attendees, sharing their competition coffee/coffees as well as more information about themselves, their business, their competition experience and their Environmental Awareness checklist.

Attendees who visit our competitor teams on the competition brew bar will be able to give the team a score out of 5, based on how much they enjoyed the interaction from a product and customer service point of view:
‘How much did you enjoy your interaction with the competitor team, based on customer service and coffee? 1 = not at all 5 =could not have enjoyed it more’
Attendees will be able to score the competitor duo by dropping a token in a cupping bowl labelled with the relevant number.

At the end of both their slots on the competition brew bar, the total points given to each competitor team will be added up and the competitor team with the highest number of points will be named ‘Audience Favourite’ and win the associated prize during the prize ceremony at the end of the competition.

During the filter round, there will also be the opportunity for an audience member to join the Experience Judges as an honorary guest judge on stage and receive a first-hand experience of the competition coffee. The audience honorary guest judges will not be able to judge the coffee, but provide the competitors another opportunity to share their competition coffee and show off their customer service skills!

With competitors on stage and brewing at the bespoke competition brew bar across the whole festival - all culminating in the awards ceremony at the end of Birmingham Coffee Festival on Sunday 7th July.
